One of the primary reasons Matt and Kelly started Chuckanut Bay Distillery in the first place was to make an epic gin. Coming from a long line of gin lovers, and as gin lovers themselves, they wanted to make a spirit that would be truly memorable.
While most gins (both ones that claim to be “craft” and big name brands alike) are made from industrially purchased grain neutral spirits (you can read more about our philosophy of gin here), Chuckanut Bay Distillery Gin is made from beginning to end right here on site – from grain milling and mashing, to fermentation, to distillation and botanical infusion. The grain bill consists of white winter wheat grown locally right up the road here in Whatcom County. Select botanicals, such as juniper, cassia, and orris root provide the gin’s characteristic bouquet. The result is what we refer to as “Bellingham Dry Style” gin – elegant, disciplined in its restraint, and highly drinkable. Subdued excitement, indeed!
In 2016, Chuckanut Bay Distillery Gin was named one of the top 50 gins in the world in the Fifty Best competition. It also won the Gold Medal at the 2016 Seattle International Spirits Awards.
